Nutella Banana Bread

Nutella Banana Bread -- NiftyMahoganyMom.com

I accomplished a lot today. I got caught up on laundry, worked out, made turkey chilli, and managed to whip up this Nutella banana bread (not bragging, just proud of myself –#mommywin).

I’m not the biggest fan of Nutella actually. I got a coupon for $2.00 off and I decided to finally give it a try. I spread it on a piece of whole wheat toast one morning and it was…okay. I then attempted to put in on a croissant. Still, it was alright, but not necessarily something I would keep stocked in the house. It may just be a little on the sweet side for me, but it’s not too bad.

I know I might be in the minority with my indifference to Nutella, but I wanted to get some use out of it so it didn’t go bad in my cabinet (not to mention I had two bundles of ripe bananas I needed to use quickly). I found this recipe and I decided that if Nutella was going to find its way to my heart, it might be through my love for banana bread (hold the nuts). It worked.

I hope you enjoy this recipe as well!

Ingredients:

  • 2 cups flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1¼ cup mashed ripe bananas
  • 1 teaspoon vanilla
  • ⅓ cup milk
  • ¾ cup Nutella

Directions:

1. Preheat your oven to 350 degrees.

2. Grease a bread/loaf pan with non-stick cooking spray (I used canola oil spray).

3. In a mixing bowl, combine the flour, baking soda, salt. Whisk them together.

4. In a separate bowl, cream together the butter and sugar. After they are well combined, blend in the eggs one at a time (blending well after each).

5. Add mashed bananas, milk, and vanilla  to the sugar/butter mixture and blend well. Nutella Banana Bread -- NiftyMahoganyMom.com

6. Add dry ingredients into the banana mixture and mix on low until flour is just well blended (do not over-mix).

7. In a small, microwave-safe bowl, heat Nutella for approximately 15 seconds or until it’s easily stirred. Add 1 cup of the banana mixture into the Nutella and mix until blended.

8. Alternate spooning the Nutella mixture and banana mixture into your loaf pan. Then, swirl mixture with a knife.

9. Cook for approximately 50-60 minutes. Let cool in loaf pan for 15 minutes, then transfer to a wire rack to complete cooling.

Small Organizational Habits That Make a BIG Difference

Small Organizational Habits That Make a Big Difference -- NiftyMahoganyMom.com

I often get intimidated when I read posts about women who have binders filled with printouts and information that they use to keep their homes and family organized on a weekly basis. I say: more power to them! That is an awesome feat. I, on the other hand, have yet to become A+ certified in sticking consistent to the paper, pencil, binder set-up. I do want to accomplish a lot more when it comes to getting my home in order though. For example, I really want to finally get my linen closet all neat and tidy so I can stop rolling up fitted sheets and shoving them in there [quite literally]. Who knows how to fold a fitted sheet?! I also want to create a more useful space in my home office area where it doesn’t look like a paper tornado touched down. A girl has to have ambitions, doesn’t she?

I am, however,  well on my way toward becoming a more organized manager of my home, and I have started with some little habits that have really helped me to keep a handle on things.

1. Make a Coin Jar. I know this may seem like a trivial piece of advice. But think about all the loose change that ends up around your house in places it shouldn’t be — the couch, the counter, the dresser, etc. If there is a designated container for all of your family’s loose change, you will know exactly where those spares should go and they will be less likely to make a mess. I remember when I was younger my father would always keep change in jars. One particular bank my parents owned was a 3 foot tall pink pig (yes, you read that right) and it was always filled with pennies. When my brother was a toddler my mom would sit it at the entrance to the kitchen to keep him out while she was cooking because he was terrified of it. Can you blame him? [I wonder if they still have that thing.] Often, they would roll their change and cash it in at the bank. I always remembered that, and the change does come in handy when you fill the jar and take it to your local CoinStar machine. It doesn’t hurt to save space and save a little money at the same time. It’s always fun to see how much money you have accumulated. It’s also a good lesson to teach your little ones about the importance of saving and how a little bit along the way adds up.

2. Create a Drop-Off Location. My husband and I were always on a mad dash around the house looking for our keys, and him looking for his work badge. A simple solution to this is to create a spot at the entrance to your home where keys, wallets, badges, etc. can be placed. This way, you will always know where your important “to-go” items are and aren’t driving yourself crazy every time you have to leave.

3. Make meal plans and create shopping lists. One of the best things that I started doing was planning out my family’s meals for the week. This helped me so much because it eliminated that mundane “What’s for dinner?” issue that we used to have every night. If you take 30 minutes a week and decide what you want to make for the next 7 days, it will also make it a lot more simple to create a grocery list that won’t have you running back to the store every other day because you forgot items, or because you shop for only one or two meals at a time. This will put your mind at ease, and allow you to devote more time and energy to other tasks that you want to tackle.

I love using Food.com (and the app) for my meal planning. It’s super easy! You can browse through a ton of recipes, add them to your personal database, and the program with generate a detailed grocery list for you! Then all you have to do is print it out, or use it right from your phone and check off items while you shop.

Check out the video of my favorite iPhone apps for planning and organizing shopping trips.

 4. Use a white board. I’m the type of person that needs to write things down when I first think of them. I purchased a magnetic white board from Walmart and put it on my refrigerator. Now, when I see that we are out of something I can immediately write it down. Then, when I’m making my grocery list, I can just glance at the board and ensure that I am getting essential items while I am out. I also use my board to remind myself of things I need to do, and of the meals that I have planned for the week (because sometimes I forget what I had planned and I’m looking at the ingredients I purchased like o_0). Don’t judge me. That’s why I need the board.

5.  Create a family/household calendar. This can be done manually with a paper calendar, but I like to use an electronic version because I don’t really like having any extra paper around. In fact, one of my organizational goals for this year is to become a paperless household. Anyway, we use Outlook. com and I created a “Family Calendar” that is shared with my husband. So, if Kelsey has a doctor appointment, we need to go out of town, or certain bills are due, I can put them on the calendar and the system will automatically send him email updates/reminders so he can stay informed about what’s going on (plus you can add cute charms to each entry). We love this system and use it all the time. It has become a habit for us.

6. Use a cleaning schedule/chart. There are many websites where you can download free cleaning charts. This has helped me a lot because it allows me to break down the large task of keeping my house clean into smaller cleaning objectives for each day. This way, even if I forget to do something, I am sure to get back around to the task even if it’s done the next week. For example, I forgot to dust last week but I let my laundry get backed up so I had to focus on that. Instead of freaking out because I didn’t dust, I just reminded myself that on that upcoming Monday, I would need to go back and dust. Now I don’t feel the pressure to get the whole house sparkling every day. I do a little at a time and my house stays tidy.

7. Do basic budgeting. Even if you haven’t conquered Dave Ramsey’s Financial Peace program fully yet, it’s still important to at least track how your money is being used each month. It doesn’t have to be complicated. Most of us want to be very proficient in organizing our finances. That’s a great goal. But, if you aren’t completely there yet doing something is better than doing nothing. My husband and I do budgets each month using a simple Excel spreadsheet. This allows us to get a good view of what we will have left over after all essential expenses have been accounted for. What’s even better about using Excel online (through Outlook.com) is that we can share this file with each other so he can access it even when he is not home. That brings me to the next organizational habit we have started implementing.

8. Use an online system for picture storage and file sharing. OneDrive is an essential part of keeping my household organized. We use OneDrive to store all of our treasured photos and we also use it to share files between one another (like our Excel budget spreadsheets). I love the fact that I can access my files from anywhere and we can stay on top of important documents for our household. There are other file-sharing systems out there. Just find the one that works best for your family.

Small Organizational Habits That Make a Big Difference -- NiftyMahoganyMom.com

That’s it! Those are some of the small things that I have started doing that help me keep my household at least somewhat organized and running effectively. I still try to get better every day, but I give myself kudos for coming this far.

What organizational habits do you have in your home? Share the knowledge! 😉

I hope this helps!

My Favorite iPhone Apps for Planning & Organizing Shopping Trips

Great iPhone Apps for Planning and Organizing a Shopping Trip -- NiftyMahoganyMom.com

I am all about using technology to my advantage. I have a few apps on my iPhone that I use on a regular basis to make my shopping trips easier and timely. I wanted to share some of my most favorite apps in hopes that you can use them too!

20150317_225353000_iOSThe first app that I absolutely love is called Food.com.

This app allows you to search through a large database of recipes stored on the system as well as a selection of other popular recipe sites. It also lets you create your own recipes to enter into your “Recipe Box”. The cool thing about this app, is that it creates an organized grocery list for you based on the recipes you add to your “Menu”. You can print the list, or you can simply mark off your items directly from your phone as you shop. This has saved me a lot of time and effort. I can easily complete my meal plans for the week, and I don’t have to worry about forgetting something that I will need for a particular dish.

The next iPhone app that has come in handy for me is called Track My Coupons.20150317_193604000_iOS

This app stores all of your coupons and their details. It’s easy to use because it has a function which lets you automatically add all of the coupons that you receive in your Sunday newspaper. You just select which ads you have (Red Plum, Smart Source, P&G) as well as the date and quantity. Then, you hit ‘add’ and all of your coupons are entered and easily organized by category, date, or alphabetically. If you want to know how I use this along with my coupon organization method, you can check out my YouTube video.

20150317_225459000_iOSAnother app that I use on a regular basis is called Shop Assist.

There is a lite version of this app, but the full version is where you will get the most benefit. It doesn’t cost more than about $3. What this app does is help to keep you on budget while shopping. As you pick up items, you simply put in the price, and the app will show you how much you have spent so far including tax. You can also add in the category of each item or enter them by name. You don’t have to use that function though. Often I will just use it to add up my purchases. This has been great for me because if I end up going over my budget, I can easily prioritize what I need now, and what I can come back for later.

The fourth app that I love is called Flipp.

Flipp takes away the need to hold on to all of those weekly store circular ads that come in the 20150317_225232000_iOSmail. With this app you can easily find and browse through the sale papers of stores in your area and add to them to a favorites list. Another cool feature is that you can mark the items that you want to purchase directly on your phone. Now, when you go to the store, you don’t have to worry about taking the paper in with you. You will already have your ad stored on your iPhone.

20150317_230743000_iOSNext, I love the Amazon.com app.

Amazon is by far my favorite online purchasing site. I get so many items from them and we also have Amazon Prime. With the Prime membership, you are able to get several items sent to you with free two-day shipping. You also get access to streaming movies, television series, and their new Prime Pantry function. I love being able to have my items in a timely manner, and the app on my iPhone just makes it that much easier to purchase the things that I need for my family.

Last, but not least, is the Walmart app.

I love shopping at Walmart. It might be because I have a store quite literally right down the street. But I also appreciate that it is a “one-stop shop”. I have especially enjoyed shopping there recently because they created the Savings Catcher. 20150317_230646000_iOS

I often find certain items on sale at different stores. In the past, I would go to several of them just to get the best price. Now, with the Savings Catcher, I feel like I can go ahead and purchase my items at Walmart, then if the app finds something that I bought at a cheaper price in my area, they will pay me back the difference in Walmart Bucks. I love this because I am all about saving time…and gas. I have accumulated quite a bit of money on my Savings Catcher. It all adds up. They will still give you the difference even if you used a coupon for your purchase.  This is a win-win for me.

Not to mention the app makes it easier for me to make online purchases which I often do.

I hope this list helps you to make your planning and shopping a little easier. Be sure to check out my YouTube video as well!

Easy Homemade Baby Food Mixes

I love introducing new foods to my daughter. By making my own baby food, I also have the opportunity to create delicious fruit & veggie mixes for her. Currently she is 7 months old and hasn’t been exposed to all foods yet. At this point, though, I have discovered that some foods just fit together really well.

Here is a nifty graphic that shows some of the food mixes that my baby has enjoyed so far!

How I Organize My Coupons

How to Organize Coupons - NiftyMahoganyMom.com

I like to use coupons to save money on the items that my family uses. I’m not an “extreme couponer” in any means, although I think the deals they get are spectacular and very entertaining to watch. My coupons come in handy, but when I first started to use them, I was a little disheartened by the amount of time that it took to organize them. Some days I would spend up to two HOURS just clipping, categorizing, and storing them. That became a hassle. Then, when I got pregnant, I pretty much fizzled out of couponing altogether because if you have ever been preggers, you know that the first trimester is very draining. I was too tired to clean the house, cook, or barely even shower. Couponing was the last thing on my mind.

Fast forward to a few months back. I decided that now I am little more comfortable in my role as mommy and I was ready to tackle those coupons again. While going through my closet, I found an old container that I used while I was a school teacher. I noticed that it provided tabs to organize documents by month and alphabetically. At that point my little nifty senses started to tingle and I wondered if I could use it to easily, and time effectively store my coupons.

This method works for me! What I do now is use a coupon app on my iPhone called “Track My Coupons”. It allows you to add coupons directly to your database from every Sunday Newspaper. There is no need to manually enter them at all (although there is a scanning function you can use as well). It’s super simple. And it’s a time-saver that I thankfully accept.

How to organize coupons - niftymahoganymom.com

After I enter the coupons into the database, I clip each one (or two, or three, or four…) and file them in my binder by brand name. This method works well for me because before I go on my shopping trip, I can just browse through my app, find the coupons that I want to use, and then pull them straight from the file. It also eliminates the need to have to categorize every coupon. There’s no guess-work in determining what the brand name is. I was also really happy to get rid of having to use those pesky baseball card holders.

If you want to see the inside of the filer and get a few extra tips, check out my YouTube video

I’m proud to say that I’m a happy couponer again.

I hope this helps you!
